| Recipe: Tempura prawns on char-grilled zucchini with wild rocket | |
Ingredients: (Ingredients

Method • Devein the prawns and dust with flour • Make the tempura batter by whisking the egg yolk and water together. Add the flour and stir in with a fork. Beat the egg white into a soft peak and fold into the batter. • Dip the prawns into the batter and cook in a deep fryer (180 deg c) for 2 minutes. Remove and drain on kitchen paper. • Cut the zucchini into thin strips and char-grill for 1 minute. Season with salt and pepper. Mix the zucchini and wild rocket together and dress with the olive oil. To
